MASTERY OF
TEMPERATURE:
WINE CARE

MASTERY OF TEMPERATURE

Every wine has an ideal temperature for perfect cellaring and serving. Our knowledge of the science of winemaking and preservation has allowed us to develop wine care solutions that can be optimized to suit different styles and varietals, so the care you take selecting a special vintage to cellar or serve, is matched in the home with perfect care.

PERFECT RESULTS

There are no great wines, only great bottles. There's a duality to wine — cellaring and serving. Mastery of Temperature is integral to the quality of both. We believe the care and diligence you take to select a special wine should be matched in the home with careful cellaring, and culminate in a unique and rewarding tasting experience.

WHITE

The more aromatic a wine, the cooler it can be served. Sparkling wines are best served at the lower end of the temperature spectrum, 6–7°C, to slow the release of carbon dioxide. Serious whites like top–flight chardonnays are better served cool rather than cold, to encourage greater expression of aroma and flavor.

RED

Lower temperatures accentuate acidity, bitterness and tannin. Higher temperatures minimize them. Served at 15°C, a full-bodied cabernet's plum, dark berry and vanillin notes present with a more balanced mouthfeel and depth of flavor. Fruit–forward lighter styles, with fresh acidity and finer tannins, will benefit from cooler serving temperatures.

CELLARING

We're obsessed with designing solutions to the things that degrade and denature wine. By mastering temperature and humidity, and engineering protection from light and vibration, we've created the stable climate conditions that are a hallmark of any great cellar — giving your collection the best opportunity to age gracefully and develop complexity over time.

WINE INSIGHTS

Every wine has an ideal serving temperature that will bring out the spectrum of flavors and aromas the winemaker has worked hard to capture. When it's time to reach into the cellar, heighten the quality of your tasting experience by adjusting an independent Variable Temperature Zone and wine mode to the optimal serving temperature.

PERFECT PINOT NOIR

A single-vineyard wine from a low-yielding vintage — served at 14°C to open up sophisticated flavor notes of red–cherry, spice and bramble.

PERFECT BORDEAUX BLEND

An old–world blend from a new world winery — served at 16°C to reveal complex fruit and berry flavors and a smooth, balanced mouthfeel.

PERFECT CHARDONNAY

A powerful, complex and rich barrel-aged wine — served at 12°C to reveal a balanced acidity, layered aromatics and orchard–fruit flavors.

PERFECT PINOT NOIR BLANC

A fresh, complex and gently aromatic blush wine — served at 10°C to release scented notes of peach, nectarine and, just perhaps, the faintest hint of almond brioche.

PERFECT CHAMPAGNE

A classic champagne — dry, lees–matured with a citrus–shortbread nose. Serve at 7°C to control the fine bead of tiny bubbles that forms the perfect mousse.

PERFECT CELLARING

The optimal environment for longer-term wine care — a stable, constant 12°C, with balanced humidity, clean airflow, and protection from light and vibration.

VARIABLE TEMPERATURE ZONES

Partnering with master sommeliers and winemakers, we've designed Variable Temperature Zone technology and four wine modes that can be optimized for serving and cellaring different styles of wine. Red Wine, White Wine, Sparkling Wine and Cellar Modes allow you to manually adjust the temperature in 0.5°C increments, ensuring each bottle receives the care required to be enjoyed at its best.

RED WINE MODE
[12-18°C]

Set Red Wine Mode to the cooler end of the temperature spectrum to evoke the complex flavors of lighter, fragrant red wines. For more rounded tannins and to open up the depth of flavor, serve more powerful, fuller–bodied reds a few degrees warmer.

WHITE WINE MODE
[6—12°C]

The temperature range in White Wine Mode can be optimized to suit light and refreshing aromatic styles, which are best served slightly cooler, as well as fuller–bodied white wines that reveal their layered aromatics and rich flavors at slightly warmer temperatures.

SPARKLING wine MODE
[6—8°C]

Champagne, prosecco and New Zealand's acclaimed méthode traditionnelle are at their peak when served between 6–8°C. The cooler temperature slows the release of carbon dioxide, resulting in the beautiful effervescence and mousse that defines the perfect sparkling wine experience.

CELLAR MODE
[11-13°C]

The hallmarks of any great cellar are a stable, neutral and controlled climate with built–in protection from vibration and UV light. In Cellar Mode at 12°C, your collection has the best opportunity to age gracefully and build complexity over time.

time, taste and enjoyment

“University of London philosophy professor Barry Smith once introduced the concept of the Provencal rosé paradox. Why is it that the wine enjoyed in the south of France never tastes as good at home? He was commenting on atmosphere — and few things are more enjoyable than sipping chilled Provençal rosé ‘au bord de la mare’. Arguably, it's also a comment on the role of temperature — because one way to improve the tasting experience at home is by serving the right wine at the right temperature.”
